Cheeseburger Biscuit Cups with Surprise-Inside Yum Yum Brownie Muffins

 

My experimental mood continued last night, although not with any recipes for the PB&J party.  Instead, I tried out a couple of new ideas for my BF’s dinner. 

The first was Cheeseburger Biscuit Cups, made with Golden Wheat refrigerated biscuit dough.  Using tortilla cup pans, I cut three biscuits in half and arranged the slices to cover the pan.  While I baked the cups in the oven, I browned 96% fat-free ground beef on the stovetop.  As the biscuit cups cooled, I mixed Tostitos Salsa Con Queso, a can of diced tomatoes and chiles and some shredded cheese into the ground beef.  I then piled the beef mixture into the biscuit cups, topped them with some more cheese and browned them in the oven.

They tasted fantabulous, but the recipe needs some refinement.  First of all, the biscuits didn’t hold together when I took them out of the tortilla pan.  And, they were way too big; it was just too much food.  The portion size kept it from being a good eating choice for me… too many calories.  Even eating only half of one, I still overate. 

I have some of the ground beef mixture and biscuits left, so I’m going to try it again tonight using one biscuit in a ramekin.  That should ensure the cup holds its shape and result in a reasonable calorie count.  I might even try adding some Green Giant frozen veggies to the ground beef to make it more nutritious.

It didn’t matter to my BF that the overly large biscuit cups didn’t hold together.  He proclaimed the evening’s meal to be “delicious” and savored every gooey bite.  He also appreciated my latest twist on the yum yum brownie muffin… with a surprise inside.  The surprise?  A chocolate-covered cherry.  Ooo… super delish!  I think when I make these again, though, I’ll do it with mini-muffin tins.  That way, the cherry will have more impact. 

Anyway, despite the inelegant presentation, it was all very tasty and enjoyed by both me and my BF.
