Healthy Fast Food: Beef Tips & Santa Fe Brown Rice

Part of the allure of fast food is the fact that it’s fast.  Of course, that’s not always the case now that it’s so popular.  You can sometimes wait in line for a half hour to get a reheated burger and soggy fries.  But, we go anyway, sacrificing quality for the time we think we’re saving after a long day.

Beef Tips and Rice - Healthy Fast Food You can make quick and healthy, not to mention man-friendly, fare at home if you plan a little bit ahead.  I’ve had Hormel Beef Tips in the freezer for several weeks.  I’ve also had a package of Uncle Ben’s Santa Fe Ready Whole Grain Medley tucked away in the pantry.  The brown rice medley includes black beans, corn and peppers.  The beef tips heat in the microwave for 4-6 minutes.  The rice, in its own microwavable pouch, is done in 90 seconds.  With a sprinkle of reduced-fat shredded cheese, this is an attractive, hearty meal that’s ready for the table in less than ten minutes.  Plus, it’s quality food; the two-serving meal delivers, per serving, 537.5 calories, 7.75g fiber, and 43.75g protein.  The fat is a little high at 18g, and if you’re watching your sodium, you’ll want to be careful of prepackaged items like these.  Still, this is terrific alternative to drive-thru nutrition any day of the week.
