Cranberry Ginger Muffins Cranberry Ginger Muffins, Close-Up After the super quick trip back home, I am feeling very homebody-ish, especially with my BF away working ’til tomorrow night.  My work day was once again extremely intense, so I was glad to get home to my quiet and peaceful crib, welcomed by my cat and our hamster.  After catching up on the phone with an old friend (what a wonderful conversation we had!), I decided to make some Cranberry Ginger Muffins.  There’s something soothing about the smell of goodies baking in the oven, even if the goodies are semi-homemade.  The scent calms me and lends a sense of security.  Even better in this case because the mix I used I bought on my trip, so it’s a distinct reminder of the special time spent with my family and my BF.

All is somehow right with the world if you are able to cook.  In these chaotic times, cooking is more of a gift than we probably realize.

Cranberry Ginger Muffins



  • Preheat oven to 350 degrees and mist muffin tin with non-stick spray.
  • Combine melted buttery spread, Eggbeaters and water in mixing bowl.
  • Mix until well blended.
  • Add cranberry mix to bowl and stir until no lumps remain.
  • Fill muffin cups 1/2 to 3/4 full.
  • Bake for 20-25 minutes.

Makes 12 muffins.

Nutrition Information per muffin: 176 calories | 2g fat | 1.25g fiber | 3.5g protein
